Napa Cabbage and Rice Noodle Salad

Napa cabbage is a classic east Asian ingredient, and it adds a welcome texture change from your normal lettuce. If anyone you are serving this dish to has peanut allergies, you can hold the peanuts and still have a great flavor profile. I am completely in favor of the author’s suggestion for the dressing; a teaspoon of Sriracha adds a great kick!

Fennel and Red Onion Salad with Grapefruit and Blue Cheese

There are a lot of strong flavors in this salad, but they actually blend nicely. The sweet onion mellows out the bite of the blue cheese, and the fennel’s licorice notes cut the tartness of the grapefruit. This salad is an exercise in flavor zen.

Butternut Squash and Wild Rice Salad

This grain and squash salad is nice and hearty, perfect for the few cold nights we have left. Maple syrup gives the dressing a distinctly New England flavor profile. The pearl onions mixed in with the fruit give a savory bite to counteract all of the sweetness.

Lentil Salad with Roasted Oranges and Radicchio

Lentils are a great way to inject extra protein into a vegetarian diet. I like using Puy lentils because they hold their texture better through cooking. For a gourmet spin, try adding walnut oil on top as well as the toasted walnuts.
